食用菌的营养价值
食用菌营养相当丰富,风味独特,而且含有相当高的蛋白质,多种氨基酸、维生素、多糖类、矿物质等营养成份,并且它的脂肪含量低,又富含纤维索,它是集多营养、低热量于一身的理想食物。


食用菌的简介
食用菌是指能形成大型的肉质(或胶质) 子实体或菌核组织的高等真菌的 类总称。目前,世界上已被描述的真达 12 万余种,能形成大型子实体或核 组织的达 6000 余种,可供食用的有 2000 余种。食用以其白色或浅色的菌丝体 在含有丰富有机质的场所生长。条件适宜时形成子实体,成为人类喜食的佳品食用菌不仅味美,而且具有较高的食用价值和较高的药用保健价值。我国的地理位置和自然条件十分优蕴藏着极为丰富的食用资源。目前已知的食用有 350 多种,可划分为4个类型:(1)传统的“五菇、三耳” (双抱菇、香菇、草菇、平菇、金针菇,黑木耳、银耳、毛木耳)。(2)天然“七彩菇”:白灵菇、红菇、金福菇、黄伞、灰树花、银丝菇、紫木耳。(3)时尚“10新秀”:杏鲍菇、姬松、茶树、鸡腿、珍珠、大球盖、真姬、秀珍、鲍鱼、大斗菇。(4)难得“五奇珍”:即松茸、美味牛肚、鸡纵菌、口蘑、羊肚。

Sofar, there has been over 350 types of edible fungi discovered in China, which can be sorted into 4 kinds.(1) The traditional “five mushrooms and three fungi”(double-spore mushroom, mushroom, straw mushroom,oystermushroom and flammulina; black fungus, tremella and Auricularia polytricha)2) The natural“colorful mushrooms: Pleurotusnebrodensis, russula ,Tricholoma giganteum,Pholiotaadiposa,Grifola frondosus,Volvariella bombycina and purple fungus.(3) 10 “rising stars: Pleurotus eryngli, Agaricus blazei, Agrocybe aegerita, Coprinus comatus, Pholiota namekStropharia rugoso-annulata, Hypsizygus marmoreus, Pleurotus geesteranus, Pleurotus cystidiosus, and Lentinus gigantus.(4)“Five precious and rare types: Tricholoma matsutake, Geoglossaceae,Collybia albuminosa,Tricholomagambosum,and Morchella esculenta.
